Abstract

The vegetable oil industry is a fundamental branch of the world economy, producing edible oils, technical oils, and various other derived products. In this industry, the raw material is represented by oilseed crops of which vegetable oils are extracted through well-established processes. The main extraction methods applied at the industrial level, highlighting the basic characteristics, their advantages, and drawbacks, are the main subject of this work.
